Southern Chili
  • 1 lb ground beef
  • 1 lb sausage
  • 1 large onion, diced
  • 1 or 2 cloves garlic
  • olive oil
  • 1 can pinto beans
  • 1 can baked beans
  • 1 can or 3 fresh diced tomatoes
  • 1 can beer
  • 2 Tbsp brown Sugar
  • 1 Tbsp molasses
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp worcestershire sauce
  • diced habanero peppers (as many as you want)
  • Italian Seasoning
  • Chili Powder
  • Oregano
  • Basil
  • Thyme
  • Rosemary
  • Cajun Seasoning
  • Red Pepper
  • Mustard Powder
  • salt and pepper
  • 1 cup rice
  • shredded cheese
  • sour cream

Saute the ground beef, sausage, garlic, and diced onion in olive oil until brown.
Meanwhile, cook the beans, tomatoes, and beer in a stock pot.
When the beef mixture is done, drain and add to to beans.
Add the sugar, molasses, vinegar, worcestershire sauce and habanero peppers to the mix.
Let this simmer until most of the liquid has boiled off - about 20 minutes.
While the chili is simmering prepare the rice.
Mix spices into the chili to taste.

To serve, put rice in a bowl, cover with chili and top with cheese and sour cream.
